- 4 nos Garlic
- Curry leaves few
- 1 inch Cinnamon
- 2 nos Cloves
- 1 nos Cardamom
- 1 Nutmeg small
- 1/4 tsp Peppercorn
- 1/2 tsp Fennel seeds
- 1 tbsp Coconut oil
- 2 tbsps Coconut oil
- 4 nos Shallots chopped
- 1 inch Chopped ginger
- 3 nos Green chilli slitted
- Curry leaves
Instructions to make to make Thaninadan Pork Curry
- Wash and clean the pork. Dry roast all the spice powders(red chili,coriander, turmeric, pepper) in low medium flame until the raw smell goes. Add this to the pork along with onion, tomato, green chilies, crushed ginger,crushed shallots, curry leaves,vinegar and salt. Mix well and pressure cook till pork is almost done.
- Peel the skin of the yam and cut into cubes (same as the size of pork). Wash thoroughly and add this to the pork and pressure cook for one whistle.
- In a pan add 1 tbsp of oil and roast all the ingredients mentioned in the roast & grind coloum. Roast until golden brown and grind it to a smooth paste. Add this to the curry and let it boil. check the salt. Once everything is mixed well, switch off the flame and do the seasoning.
- Serve hot with rice
